- 1/4 cup onion (minced)
- 1 garlic clove (minced)
- 1 tomato (small, chopped)
- 1 tomato (small, chopped and mashed)
- 4 prunes (seeded and chopped)
- 1/3 cup water
- 1/2 red bell pepper (seeded)

Directions
- Season the chicken with salt and pepper
- Add 1 tablespoon of olive oil to a skillet and heat on medium heat.
- Place the chicken into the skillet and lightly it until each side turns golden. The chicken does not have to be fully cooked. Remove the chicken from the skillet and set aside.
