- 2 tsp. lime zest (finely grated, from 1½ limes)

- 4 scallions (sliced, white and green parts separated)
- 5 Tbsp. cilantro (stems removed, chopped; more for garnish, about 1 large bunch)
- 1 lime (sliced, for garnish, optional)
