- 1 1/2 lb. boneless skinless chicken breasts ((700 grams) large halved horizontally to make 4 fillets (I use 2 large breasts -- 12 oz or 350 grams each))
- 1 tsp. salt (adjust to your tastes)
- 3/4 tsp. cracked pepper (black, adjust to your tastes)
- 1 1/2 tsp. paprika
- 1 1/2 tsp. onion powder
- 3 Tbsp. oil (reserved sun dried tomato, or olive oil, divided)
- 2 Tbsp. minced garlic (6 cloves)
- 5 oz. sun dried tomato (150g jarred strips in oil drained (reserve 3 tablespoons of oil for cooking))
- 1 tsp. Dijon mustard
- 1 1/2 cups cream (heavy or thickened, or evaporated milk for lower calorie/fat)
- 3 cups spinach
- 1/2 cup grated Parmesan cheese (fresh)
- 2 Tbsp. chopped parsley (fresh, to serve)

Very tasty. Would say it needs a little adapting, would only put 30grams Parmesan in, not 50 as it was a bit over cheesy..would also put a cup of white wine in it (at the garlic stage and reduce it by half) as I felt the sauce was a bit too thick and not saucy enough. Other than that, it was delish!
