Just seven ingredients are used here, most of them pantry staples. Lean chicken breast and heart-healthy almonds make this version healthy, too. If you don't have a wok, you can use a large saute pan with equally good results.

  • 1 chicken breast
  • almonds (peeled)
  • flour
  • 1/2 shallot (sliced finely)
  • broth
  • vegetable oil
  • soy sauce

    Directions

    1. Cut the chicken breast into small pieces and flour it.
    2. Toast the almonds in a pan and set them aside.
    3. Heat some oil in a wok, add the shallot and the chicken and saute for a few minutes. Add a ladleful of hot broth and cook for 15 minutes.
    4. Add the almonds and drizzle with some soy sauce, stir and cook for 5 more minutes.
    5. Turn off the heat and serve hot.
