- 1 Tbsp. scallion (sliced)
- 1 Tbsp. red onion (chopped)
- 2 tsp. fresh ginger (grated)
- 5 Tbsp. extra-virgin olive oil
- 1 Tbsp. fresh orange juice (valencia)
- 1 Tbsp. fresh lime juice
- 1 Tbsp. champagne vinegar
- 1 pinch Himalayan salt (pink)
- ground pepper (fresh pink)
- Dijon mustard (dab of, just under a teaspoon)

- 1 sprig spearmint (for garnish, optional)
