Once of the best omelets I’ve eaten in a while, I added grilled onions, peppers, and tomatoes as well.

This recipe was fantastic (and fun to make). They're accurate in their recommendation to stick with the 12" pan for a thinner omelet. I used a 12" pan, but increased the recipe to accommodate 6 eggs, rather than 4 eggs. So yes, it was a thicker omelet. Still fantastic, just had to pull from the stove and place in oven 2 minutes to finish the top of the egg (didn't want to overcook the bottom). I would definitely make this again. I served it for dinner with a nice green salad.
