  • 3 rashers (streaky bacon or pancetta, chopped roughly)

  • 2 slices white bread (cut into cubes)
  • grated Parmesan (a little, for the croutons plus some shavings, to go straight into the salad)
  • 1 anchovy fillet (in oil, drained)
  • 1 clove garlic
  • 2 teaspoons mayonnaise
  • 1 teaspoon lemon juice
  • 15 grams Parmesan (grated)
  • 2 tablespoons crème fraiche
