  • 5 tablespoons olive oil
  • 4 medium zucchini (sliced)
  • 1/2 pound skinless chicken breast fillets (cut into strips)
  • 7 ounces goat cheese (creamy)
  • 4 sprigs fresh mint leaves (chopped)
  • 2 tablespoons semolina (or all-purpose flour)
  • 1/2 cup walnuts
  • 1/2 cup fresh breadcrumbs

    Directions

    1. Preheat the oven to 400°F. Grease an ovenproof serving dish. Heat 1 tbsp oil in a frying pan and sauté the zucchini for 3-4 mins. Remove and drain on paper towels. Add 2 tbsp oil to the pan, heat and sauté the chicken until browned all over. Season with salt and black pepper and drain on paper towels.
    2. Transfer the zucchini and chicken to a bowl and stir in the cheese, mint and semolina. Season with salt and black pepper and spoon into the dish.
    3. For the topping, sauté the walnuts in a dry pan until toasty. Allow to cool and chop roughly. Mix with the breadcrumbs and 2 tbsp oil and sprinkle over the casserole. Bake for 20 mins.
