  • 16 ounces rotini pasta (package)
  • 2 tablespoons olive oil
  • 1 onion (sliced)
  • 1 clove garlic (crushed)
  • 1/2 pound chicken breast (thinly sliced)
  • 2 ounces broccoli florets
  • 1 red pepper (seeded, sliced)
  • 1 zucchini (halved, sliced)
  • 14 ounces diced tomatoes
  • 1/2 cup chicken stock
  • 1 tablespoon basil leaves (roughly chopped)
  • 2 ounces Parmesan cheese (freshly shaved)
  • crusty bread (to serve)

    Directions

    1. Cook pasta according to package instructions. Drain and return to pan.
    2. Meanwhile, for the sauce, heat oil in a large frying pan on medium. Sauté onion and garlic, 2-3 mins, until tender. Add chicken and cook, stirring, 2-3 mins. Add broccoli, pepper and zucchini and cook 2-3 mins. Stir in tomatoes and stock and simmer 4-5 mins until vegetables are tender.
    3. Toss pasta with sauce and basil and season to taste. Top with Parmesan and serve with crusty bread.
