- 1 1/2 cups onions (chopped)
- 1 cup green bell peppers (chopped)
- 3 stalks celery
- 3 garlic cloves
- 1/4 cup vegetable oil
- 3/4 cup flour
- 6 cups chicken broth (warm, I boil the bones from a Rotisserie chicken)
- 2 bay leaves
- 1/4 tsp. cayenne
- freshly ground black pepper
- 1/2 tsp. white pepper
- 1 tsp. seasoning salt
- 1/4 tsp. thyme
- 1/4 tsp. oregano
- 1 Tbsp. worcestershire sauce
- 3 dashes hot pepper sauce (I like Frank's)
- 2 cups okra (sliced fresh)
- 2 Tbsp. fresh parsley (chopped)
- 1 lb. smoked sausage
- 1 lb. chicken meat (cooked, diced, I use a Rotisserie chicken, no skin)
