  • 1/4 cup canola oil
  • 1 pound chicken legs (or thighs)
  • 2 stalks celery (sliced)
  • 1 onion (sliced)
  • 1 leek (trimmed, sliced)
  • 1 green pepper (seeded, sliced)
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon smoked paprika
  • 2 cups chicken stock
  • 13 1/2 ounces diced tomatoes
  • 3 teaspoons Tabasco Sauce
  • 9 ounces shrimp (peeled, deveined)
  • 9 ounces fish fillets (boneless, cubed)
  • 1 handful fresh parsley leaves (chopped)
  • lemon juice (to taste)
  • steamed rice (to serve)

    Directions

    1. Heat 2 tbsp oil in a large frying pan over high heat. Brown chicken then set aside.
    2. Add remaining oil to pan. Sauté celery, onion, leek, pepper and garlic for 5 mins, until tender. Add flour and paprika. Cook, stirring, for 1 min. Return chicken to pan along with stock, tomatoes and Tabasco. Season to taste. Simmer for 10-15 mins.
    3. Add seafood and simmer for 5 mins. Add parsley and lemon juice. Serve with rice.
