- 2 Tbsp. olive oil
- 1 can black beans (rinsed and drained)
- 2 tsp. ground cumin
- 2 tsp. chili powder
- 3 garlic cloves
- 1/2 cup chopped cilantro
- salt (to taste)
- pepper (to taste)
- 28 oz. red enchilada sauce (medium)
- corn tortillas (Pack of small, will need around 10-12)
- 1 1/2 cups Mexican cheese (shredded)
