- 2 handfuls rocket leaves
- 1 red pepper (diced, about 1 cup)
- 1/4 cup rice vinegar (or cider vinegar)
- 2 Tbsp. canola oil
- 1 Tbsp. soy sauce (or coconut aminos for gluten-free and soy-free version)
- 1 tsp. sesame oil
- 1 tsp. sugar
- 1 bunch green onions (sliced, about ½ cup sliced)
- 1/2 cup slivered almonds (or sliced)
