Amazing flavor! Used fire roasted diced green chilies in lieu of hatch since I couldn't find those. The rice took longer to soften but that was minor. We all really enjoyed this.

I used canned chicken broth & roasted two red chilies (couldn’t find Hatch chills) another touch, 1/2 cup diced bell pepper. The finished hue was darker yellow than the photo so I didn’t let my wife look at it until served. She absolutely loved it and out of the blue suggested we should add avocado to it.......what? I did buy one but it was not ready so she had buttered French bread instead. I’ll make this again for sure! Thanks for the recipe.

I'm not a cilantro (allergy) or meat eater, but I really like this stew! And my family likes it without the chicken too.
