- 6 lb. chicken (. I used one full chicken, 4 pounds plus about a pound of chicken thighs.)
- 2 carrots
- 3 celery (stocks)
- 1 onion (quartered)
- 20 peppercorns
- 1 garlic bulb (horizontally sliced)
- 2 bay leaves
- chicken (Carcass from full)
- 7 cups water (until it covers everything)
- 6 Tbsp. butter (or fat reserved from chicken stock)
- 6 Tbsp. flour
- 6 cups stock
- 2 cups cake flour (you can sub all-purpose flour, but seriously. Try cake flour.)
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 2 Tbsp. butter (melted)
- 3/4 cup milk
- 1 bag frozen peas
- 1 cup carrots (chopped)
- 1 leek (cleaned and chopped)
- 1/4 cup parsley
