The pepper filling was pretty good! But the peppers could have used more cook time. I also had way too much filling left over, I could have easily made at least three more super stuffed peppers if I had bought more poblanos. All in all a pretty good dish and definitely worth a try but I dont think I’ll be making it again as I prefer a more tradition stuffed poblano.

This had wonderful flavor but I had to put it back in the oven. The peppers were still pretty crispy.
