- 8 oz. chicken thighs (or chicken breast, cut into thin strips)
- 1 Tbsp. water
- 1 tsp. vegetable oil
- 1/2 tsp. soy sauce
- 1 tsp. cornstarch
- 16 oz. mung bean sprouts (fresh)
- 4 scallions (cut in half lengthwise, and then into 2-inch pieces, white and green parts separated)
- 2 cloves garlic (minced)
- 5 chinese black mushrooms (dried or fresh, or Shiitake mushrooms, sliced)
- 3 Tbsp. vegetable oil (divided)
- 2 tsp. Shaoxing wine
- 2 tsp. oyster sauce
- 3/4 tsp. salt
- 1/4 tsp. sesame oil
- ground white pepper (Pinch of fresh)
- 1/4 tsp. msg (in short: perhaps controversial, definitely optional, really gives that extra restaurant flavor)
- 1 tsp. cornstarch (dissolved in 2 teaspoons water)

Very good, I didn’t have all of the ingredients so I substituted with what I had. We don’t use MSG either for health reasons. I would make it again. Nice mild flavor.
