  • 2 1/2 ounces sushi rice (rinsed, drained)
  • 2 teaspoons granulated sugar
  • 2 tablespoons rice wine vinegar
  • 4 sheets nori seaweed
  • 4 teaspoons mayonnaise
  • 8 baby lettuce leaves
  • 3 ounces rotisserie chicken (shredded)
  • 1/2 avocado (peeled, pitted, sliced)

    Directions

    1. Bring rice and 2 cups cold water to a boil, stirring. Reduce heat, cover and simmer for 12 mins. Remove pan from heat and set aside, covered, for 10 mins. Spread over a baking tray. Combine sugar and vinegar and stir until sugar dissolves. Drizzle over rice then stir to coat. Cover with a damp tea towel and let cool.
    2. Place 1 sheet of nori, shiny-side down, on a flat work surface. Using damp hands, spread 1/4 of the rice mixture over nori, leaving a 2/3 inch border. Spread 1 tsp mayonnaise over top then arrange lettuce, chicken and avocado along center. Roll up tightly to enclose filling. Cut into pieces. Repeat with remaining ingredients.

    This tasted amazing and was very easy! I tend not to like the flavor of rice vinegar, so I only used half of what was called for---still turned out great! Will remake for sure!
