- 1 green bell pepper (large, seeded and chopped)
- 6 cloves garlic (minced)
- 8 cups low sodium chicken broth (this lets you adjust the salt as necessary–the sausage, chicken, and seasonings are all salty, so you don’t want your gumbo to be too salty.)

- Tabasco Sauce (Cajun seasoning and, to taste)
