- 24 oz. hard cider (divided)
- 6 cups chicken stock (divided)
- 2 bay leaves
- 8 potatoes (baby redskin, cut in half or quarters, depending on size)
- 1 lb. chicken thighs
- 6 Tbsp. AP flour (divided)
- salt
- pepper
- 2 Tbsp. vegetable oil (divided)
- 2 Tbsp. butter (divided)
- 1 onion (medium-large, chopped)
- 8 cloves garlic (minced)
- 1 tsp. dried thyme (or 1 T fresh minced if you have it)
- 10 oz. brown beech mushrooms (white and/or, I used a mix, chopped into bite sized chunks)
- 1/2 cup cream
- 1 cup half and half
- 1 cup milk
- 2 Tbsp. fresh lemon juice
- thyme sprigs (some tender, for garnish, optional)
