- 1/4 cup green bell pepper (diced)
- 1/2 cup diced onion
- 1/4 cup diced celery
- 1/2 cup shredded cheddar cheese
- 2 cups diced chicken (cooked, I used about half of the meat from a store-bought rotisserie chicken)
- 10 oz. cream of chicken soup
- 1 cup chicken broth

This was phenomenal!!! I didnt have high hopes at first. It always seems condensed soup dishes like this turn out so bland, but this had really good flavor!! and anything with cornbread is a plus for our family. I added extra pepper (just our taste). I bought cornbread from our grocer's bakery because I was short on time and didnt want to bake my own. If you do bake your own, I would suggest baking it the day before or several hours before so its set and cooled. Older cornbread goes REALLY well in this. Also, I reserved a 1/4 cup of cornbread for the last 5 minutes of baking, and stuck it under the broiler to get the top a little crispy. This could also work really well with a store bought rotissere chicken to save time as well. I recommend you try it! This is kid friendly and will go into our dinner rotation!
