- 8 fresh shiitake mushrooms
- 4 cms fresh ginger (cube, peeled)
- 1 garlic clove
- 3 shallots (/spring onions, trimmed and cut into pieces)
- 1 sprig coriander root (fresh, stalks and leaves, cut into pieces)
- 200 grams skinless chicken breast fillets (cut into pieces, 4cm)
- 1 Tbsp. soy sauce
- 1/2 tsp. sesame oil
- 1/2 egg white
- 1 pinch salt
- 24 squares wonton wrappers
- water (for brushing)
- 2 chicken drumstick (skin on)
- 3 cms fresh ginger (cube, peeled and cut into 3 pieces)
- 3 shallots (/spring onions, trimmed and cut into pieces, plus extra for garnishing)
- 2 sprigs fresh coriander (stalks and leaves, cut into pieces, leaves reserved for garnishing, optional)
- 1 star anise
- 60 grams soy sauce
- 2 Tbsp. Shaoxing wine (or Chinese rice wine)
- 1 tsp. raw sugar
- 1,500 grams chicken stock (liquid, see Tips)
- 4 baby corn (cut into halves)
- 4 bok choy (cut into halves and washed)
- 80 grams bean sprouts
- Sriracha sauce (to serve)
- 1 lime (cut into quarters, to serve)
