- pitted olives (handful black)
- 3 shallots (small, peeled and left whole)
- 6 garlic cloves (peeled and squashed)

- 1 tsp. ground coriander (each, and cumin)
- 1/2 tsp. ground turmeric (each, and mustard seeds)
- 1/2 tsp. chilli powder (mild or hot, depending on taste)

- 1 red chilli (long, thinly sliced)
- 1 bunch spring onions (sliced)
