- 1 Tbsp. coconut oil (such as Nutiva)
- 1 onion (large, peeled and diced)
- 3 garlic cloves (peeled and minced)
- 1 jalapeno (seeds removed and minced, leave the seeds if you like it spicy)
- 1 red pepper (seeds and ribs removed, diced)
- 1 green pepper (seeds and ribs removed, diced)
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. paprika
- 2 tsp. chili powder
- 1 tsp. salt (add more to taste)
- 3 Tbsp. tomato paste
- 15 oz. black beans (drained and rinsed)
- 15 oz. diced tomatoes
- 8 cups chicken stock (organic, homemade preferred)
- 2 chicken breasts (large)
- 1/4 cup hummus (I like garlic, plain, or roasted red pepper hummus- this is to thicken the soup but you can also mash ¼ of the black beans to add for thickness)
- 6 corn tortillas (cut into strips)
- chopped cilantro (optional)
- organic sour cream (optional)
- lime wedges (optional)
