- 2 qt. chicken stock (see recipe here or canned chicken stock)
- 1 chicken (see recipe here or, here or use a rotisserie chicken from the supermarket)
- 16 corn tortillas (white or yellow, 4 will be cooked and used as a topping and 12 will be cooked and used to thicken the soup)
- 1 Tbsp. olive oil
- 2 Tbsp. vegetable oil
- 2 cups onion (diced)
- 3 Tbsp. jalapeno (diced, depending on how hot you like it)
- 2 Tbsp. garlic (fresh, chopped)
- 1 1/2 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. white pepper
- 2 tsp. gumbo filé powder (optional but recommended)
- 14.75 oz. creamed corn
- 7 oz. green chilies (diced mild)
- 4 Tbsp. yellow corn meal (depending on how thick you like it *see note)
- 29 oz. fire-roasted diced tomatoes (drained)
- 3 Worcestershire sauce (shakes)
- kosher salt (as needed to taste)
- lime wedges
- jack cheese
- cilantro
- tortilla strips (reserved from earlier step)
- taco sauce (see our recipe here)
- avocado (Slices of fresh)

We enjoyed it! I made a few minimal changes. I made crock pot chicken bone broth the night before, not a change. I used rotisserie chicken meat and used a can of regular corn, not creamed. I also added one large chopped yellow squash when adding the stock. And since I have never used tortillas in the soup before, I baked half the amount in the toaster oven and was pleased. I only used the immersion blender on the lower portion of the soup as we like a chunky soup. This made a large stockpot full and everyone really liked it. Will definitely make it again.
