Very good flavorful soup! I doubled the spice mix to add more kick - turned out great! Loved the addition of cornmeal to add texture and thickness 👍🏽

Good. Didn’t have jalapeños or Rotel. Added dried red pepper flakes and used my homemade canned diced tomatoes. Doubled the spice and added corn cut off the cob. Cooked the black beans from scratch (1 cup dry black beans, 1/4 cup dry red kidney beans, 1/4 cup dry adzuki beans) - used 2 cups of the cooked beans. Baked chicken breasts didn’t flake well so I threw them in the black beans to boil for 10 min or so then they flaked alright.

Delicious! Tried to make it as low carb as possible my adding just one can of beans and no cornmeal. Added more peppers for a little more bulk.
