- 2 Tbsp. ghee (or coconut oil, how to make ghee)
- 1 yellow onion (finely chopped)
- 4 garlic cloves (chopped or pressed)
- 1 poblano pepper (-2 ,medium, chopped)
- 6 cups homemade chicken stock (how to make chicken stock)
- 2 chicken breasts (diced, from making chicken stock)
- 18 oz. diced tomatoes (jar of, Jovial tomatoes are are my favorite, they are sold at Whole Foods)
- 1/2 cup beluga lentils (find them at most health food stores)
- 3 Tbsp. tomato paste (I buy tomato paste in grass jars)
- 1 Tbsp. chili powder
- 1/2 Tbsp. paprika
- 1 tsp. cumin
- 1/2 Tbsp. sea salt (or more to taste)
- freshly ground black pepper (to taste)
- 1 lime (Juice of)
- 1 handful chopped cilantro
- sour cream
- chopped cilantro
- tortilla chips (Crushed)
- shredded cheese
- avocado (Sliced)
- green onions
