we use rotisserie chicken, crushed tomato, coriander & cumin are a MUST. Only add salt & pepper for spices.
Carrots & celery not necessary, but they add fiber to your soup... we prefer black beans (since that's more mexican than carrots lol)
sometimes we add drained diced tomato.
Avocado & shredded cheese & cilantro are really good toppings.
We DO NOT use the cut tortillas... tried it once and it was a messy filler with no taste. Pass...
Hard tortilla chips are good on top too.
You can basically customize this recipe based on your tastes.
We make this 2-3 times a month. Yum!
