- 1 chicken breast (shredded)
- 1/4 onion (sliced)
- 1/4 cup green bell pepper (cut into strips)
- 1/2 carrot (ground)
- 2 Tbsp. bbq sauce
- 2 slices bread
- oaxaca cheese (as desired, you can also use any other kind of cheese that you like)

Directions
- Toast the bread slices.
- Grease a deep, wide skillet with cooking spray, and add the onion and green bell pepper. Let them cook on medium until the onion browns.
- Add the chicken and carrot to the skillet, and cook for 2 minutes.
