- 1 Tbsp. Mexican cheese (salty, cotija or fresco work best)
- 2 Tbsp. cilantro
- 1 Tbsp. refried black beans (Amy’s)
- 1 Tbsp. pickled jalapenos
- 3 dashes Cholula (green chili, and/or chipotle cholula)
- 2 Tbsp. Greek yogurt (0%, or sour cream if you aren’t making skinny choices)
- 1/2 lime
- 2 tortilla shells (large burrito-size)
- 1/3 cup chicken (tinga)
- 1 cup shredded Monterey Jack cheese
- 2 Tbsp. queso fresco
- 1 Tbsp. fresh cilantro (chopped)
- 3 dashes Cholula Hot Sauce (green chili)
- 2 Tbsp. neutral oil
- salt
- 2 Tbsp. olive oil
- 1 yellow onion (diced)
- 4 garlic cloves (roughly chopped)
- 1 tsp. oregano (the mexican variety is best if you can!)
- 1 tsp. cumin
- 1 can chipotle sauce
- 3 chipotles in adobo sauce
- 1 can fire roasted tomatoes
- 1/2 cup chicken broth
- 1 Tbsp. apple cider vinegar
- 2 qt. chicken (loosely packed shredded, or about 3-4 large boneless chicken breasts, boiled and shredded)
