Note: the first 8 ingredients are the marinade for the 9th ingredient, the chicken. The remaining items (2T of butter on) are used in the preparation of the dish.

  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground red pepper
  • 2 teaspoons ground black pepper (fresh)
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ginger powder (or 3/4 in piece of fresh ginger root, minced)
  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 2 jalapeño peppers (minced)
  • 4 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 2 teaspoons garam masala
  • 1 teaspoon salt
  • 16 ounces tomato sauce (2, 8 oz cans)
  • 1 1/2 cups whipping cream

    Directions

    1. Combine yogurt, lemon juice, cumin, red pepper, black pepper, cinnamon, salt and ginger in a zip lock plastic bag. Stir in chicken, marinate in refrigerator 8 hours or more
    2. Thread chicken onto skewers (or place in grill pan) and grill until done.
    3. Melt butter in a large, deep skillet over medium heat, add garlic and jalapeño; cook 1 minute.
