  • 1 onion (cut into slices)
  • 1/2 red pepper (cut into strips)
  • 1/2 yellow pepper (cut into strips)
  • 3 pitted olives (table spoons)
  • 1/2 cup shredded cheddar
  • 3 tablespoons olive oil
  • 1 teaspoon dried parsley
  • 1 1/3 cups lard (265 gm/9⅓ oz, or vegetable shortening)
  • 1 1/2 teaspoons salt (10 gm/1/3 oz, omit if already in masa mixture)
  • 1 1/2 teaspoons baking powder (8 gm/¼ oz, omit if already in masa mixture)
  • 4 cups masa harina (480 gm/17 oz, corn tortilla mix, I used corn meal)
  • 2 cups low sodium chicken broth (360 ml – 480 ml)
