- 1 yellow onion (finely chopped)
- 1 bell pepper (any color - I use red, finely diced)
- 4 cloves garlic (minced)
- 2 lb. ground chicken (not super lean, a mixture of white and dark meat is preferred)
- 1 Tbsp. paprika
- 2 tsp. chili powder (ancho)
- 1 1/2 tsp. ground cumin
- 1 1/2 tsp. dried oregano
- 1/8 tsp. cayenne pepper (to taste)
- 1 tsp. kosher salt (to taste)
- freshly ground black pepper (to taste)
- 1 cup tomato sauce (8 oz., can use crushed tomatoes instead)
- 5/16 cup fresh cilantro (chopped, can use 1 tsp. ground coriander instead, adding it with the other spices)
- corn (or flour tortillas, warmed)
- shredded mexican cheese blend (such as Monterrey, Colby, or Pepper Jack)
- lettuce (shredded, or cabbage)
- diced onions
- fresh cilantro (chopped)
- diced tomatoes
- salsa (or pico de gallo)
- avocado (or guacamole)

It was delicious I tweeked it a little made it with chicken breast then shredded it. Added a some lime at the end while simmering
