Very good throw together meal. I did not have the chili beans on hand so I added 2 tablespoons of taco seasoning to make up for the change.

I made a variation of this based on what I had on hand & made it in the Instant Pot. 2 chicken breasts + 2 cups of water, Penzey’s Fox Point seasoning. 45 minutes and quick release. Shredded chicken then added corn, beans, half an envelope of Trader Joe’s Taco Seasoning, 2 more cups of water, a chicken bullion cube. 15 min pressurized & quick release. Sour cream, cheese & chives on the side and served with tortilla chips.

Winged it a bit, used frozen corn instead of canned, kidney beans instead if chili beans, added a cup of chicken broth and found a recipe on yummly for taco seasoning. Cooked in instant pot pressure cooker for 30 mins..Topped with some avocado and plain greek yogurt...delish!
