It was one of those days... everything and everyone needed my attention from the contractors building the new tractor barn, to the mama sheep delivering twins. I realized I had not planned anything for supper and a cold front was blowing in. It was going to be a West Texas dry freeze. I had some seasoned boneless skinless chicken breasts in the freezer but they were going to take way too long to thaw. Then I thought of my new Foodie pressure pot I got for Christmas. I doubled everything because we LOVE SOUP! and it was the weekend. With the exception of the cans of Beans and the Corn I tossed everything in the pot ice cold, set the pot for 45 minutes. When it was done I added the beans and corn. Switched to HI and the slow cooker mode closed the lid for 5 minutes and it was done. Reduced it to keep warm. I made a big pan of Cowboy Cornbread. I had some chopped cilantro and sour cream on the side. It was wonderful everyone came in at different times and could grab a bowl dress it as they liked. I was a BIG hit. and will become a #1 go-to In The Bunkhouse
