- 1 lb. boneless skinless chicken breast (cut into 1 inch pieces)
- salt
- pepper (to taste)
- 1 tsp. corn starch (or arrowroot powder)
- 3 Tbsp. cooking oil
- 3 cloves garlic (minced)
- 1 tsp. fresh ginger (minced)
- 2 cups broccoli florets
- 1 cup sugar snap peas (can also use or add snow peas, red bell peppers or zucchini)
- sesame seeds (for garnish, optional)
- green onions (chopped, for garnish, optional)
- 1/4 cup low sodium soy sauce
- 2 Tbsp. oyster sauce (if allergic - leave out and use more soy sauce or hoisin sauce can be used but the flavor won't be quite the same since it's sweeter)
- 2 Tbsp. honey (or brown sugar)
- 2 tsp. sesame oil
- 2 Tbsp. corn starch
- 1/2 cup water (plus more as needed to thin out sauce - I used 1 cup)
- 1 tsp. Thai chili garlic sauce (or Sriracha, optional to taste)
- 1/2 tsp. fish sauce (optional but if you have it in your pantry already - it adds an exceptional depth & umami flavor)
- cooked rice (quinoa or noodles)

Everyone was torn - I thought it was great, hubby didn’t think it was anything special, and kiddo said it wasn’t bad or good. Used the author’s notion of “cleaning out the fridge” and used peppers, carrots, celery, onion, & snap peas.

Made this last night and we enjoyed it very much. Chicken moist,veggies terrific,and sauce so very good. Will make again.

A little time consuming but delicious. Goes perfect with egg rolls and brown rice. Perfect to reheat for lunch. A keeper.
