- 2 cups chopped celery (very coarsely, including leaves, plus ¾ cup chopped)
- 3 garlic cloves (crushed)
- 6 thyme sprigs
- 2 tsp. fresh thyme leaves
- 3 tsp. salt
- 1 Tbsp. butter oil
- 1/2 tsp. freshly ground pepper
- 2 cups all purpose flour
- 1 tsp. salt

- 1/2 tsp. sugar
- 1/4 cup butter (cut into small cubes and chilled)
