I thought it was a bit bland and there was not enough juice. I added some chicken stock (1 cup) and a tablespoon of liquid from the marinated cherry peppers.

We loved this recipe, it is a keeper. Flavourful, satisfying and very easy to make. Also leftovers were just as good the next day.
