- 500 grams chicken breast (cut into thin strips, for a vegetarian option, use 300-450g extra firm tofu, cut into blocks)
- 3 lemongrass stalks (chopped)
- 4 pandan leaves (chopped, available from Asian supermarkets)
- 3 Tbsp. galangal (chopped)
- 150 mL coconut milk
- 1 tsp. turmeric
- 2 tsp. curry powder
- 1 Tbsp. Thai fish sauce
- 3 Tbsp. vegetable oil
- 1 Tbsp. coriander seeds (ground)
- 1 Tbsp. caraway seeds (use 2 tablespoons of garam masala powder if you don’t have coriander and caraway seeds)
- 2 Tbsp. sugar
- 1 Tbsp. oyster sauce
- 1 Tbsp. light soy sauce
- 250 mL coconut milk
- 1/2 Tbsp. red curry paste
- 1/2 Tbsp. Massaman curry paste
- 2 Tbsp. palm sugar
- 1 Tbsp. brown sugar
- 1 Tbsp. Thai fish sauce
- 100 mL tamarind paste
- 150 grams roasted peanuts (crushed)
