- 4 boneless skinless chicken breast halves (whole or cut into smaller pieces)
- 1 cup rice (uncooked, I like to use parboiled rice)
- 15 oz. black beans (rinsed and drained)
- 1 orange bell pepper (or large red, yellow, cut into 1/4-inch dice)
- 2 cups prepared salsa
- 1 cup chicken stock (try my easy homemade recipe)
- 1 1/2 tsp. ground cayenne
- 1 tsp. dried oregano
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 2 cups shredded cheddar cheese
- 4 scallions (sliced)

Excellent, served sour cream to reduce some of the heat. Going to use leftovers with soft taco shells

I added more salsa later and I will definitely be making this again. It was a easy dish to make.
