Taco Tuesdays just got a whole lot tastier! These Chicken Salad Tacos are a nutritious and refreshing take on a traditional favorite. And with only 130 calories per taco, you can have a few. All these ingredients are wrapped in warm corn tortillas. Tuesday can’t come soon enough! - 2 boneless, skinless chicken breasts
- salt and ground black pepper
- 1 whole scallion
- 1/2 red bell pepper
- 1 cup kale
- 1 stalk celery
- 2 Tbsp. light mayonnaise
- 1 tsp. light sour cream
- 1 lemon
- 2 Tbsp. fresh cilantro
- adobo (optional)
- 5 corn tortillas

Directions
- Salt and pepper the chicken breasts and saute, turning, until cooked. Set aside for 5 minutes and then cut into large cubes.
- Mix together the mayonnaise, sour cream, lemon juice and rind, cilantro, and adobo. Add the diced chicken, scallion, red bell pepper, kale, and celery.
- Mix well and serve in warm corn tortillas.
