It was good, except I added too much salt. I grated the carrot, added a bit of yellow bell pepper (because it was there), and a dash of Dijon mustard. I also used less onion.

i added grapes and pecans and turned out amazing. i will definitely make this for lunch more often. only thing i would change is finely chop the carrots and add less onions so there not so overpowering.
