- 8 chicken breasts (thin, I just bought a package of the thin cut ones, but you could always buy a package of regular and cut them in half, or pound them out if you want. Bottom line, each chicken portion should be about 3 oz.)
- 1/2 cup Italian bread crumbs
- 1/4 cup Parmesan cheese (seriously, though, if you love cheese like we do…just put however much you want…no need to measure)
- 6 Tbsp. egg whites (the egg whites from 3 jumbo eggs measured out just over 6 tbsp)
- 5 oz. frozen spinach (squeezed dry)
- 6 Tbsp. part skim ricotta cheese (we used a little more…)
- 1/4 cup grated mozzarella cheese (the original recipe calls for 1.5 oz of grated mozzarella…we don’t usually measure our cheese in ounces, so we just put as much as we wanted…which ended up being about 1/4 of a cup)
- 8 slices mozzarella cheese
- non-stick cooking spray (olive oil)
- 1 cup marinara sauce (again…you can put as much or as little as you want…we ended up not even measuring this)
- salt
- pepper
