- 8 cups chicken broth (I like to do part bone broth and part regular broth)

This soup is easy to make even when you use frozen chicken thighs with bones and skin . It makes a nice broth without adding all that extra salt using bouillon cubes or canned broth. I substituted edamame instead of frozen peas because I think they add a nice flavor. Great soup for a cold rainy spring day. I love using quinoa instead of noodles. Nutritious indeed and a warm comfort food. It went well with bread machine onion bread and the house smelled yummy. I didn’t mind staying inside today!
