- 2 Tbsp. buttery spread (+ ¼ cup dairy-free)
- 1/4 cup all-purpose flour (I use white whole wheat because that’s what I keep on hand)
- 1 1/2 cups unsweetened soymilk
- 2 vegan bouillon cubes ("no-chicken", if they are the double size kind, be sure to use just one)
- 1/2 tsp. celery seed (optional)
- 8 oz. sour cream (vegan, alternative)
- 8 oz. Morningstar Farms® Meal Starters™ Chik'n Strips (packages vegan chick'n strips cut into bite size pieces, I use thawed, you can substitute 1 pound chicken-flavored seitan)
- 1 can water chestnuts (sliced, drained)
- 7 oz. buttery crackers (vegan, such as Late July or Ritz, crushed)
- 2 tsp. poppy seeds
- 4 cups baby spinach leaves (fresh)
