There is inconsistency with the number of cans noted in the recipe. We used one 13.5 oz can of coconut milk. We also used half a fresh pineapple. We cook low FODMAP, so we left out the garlic powder. It had a pleasant flavor over brown Jasmine rice. We are adding it to our routine menu. Being ethnic folk, we missed the spice and would likely add some chile powder or crushed red pepper. Thank you.

my wife generally gets pineapple curry from a thai restaurant and she generally likes it. i have tried from the thai places and thought it was too bland. this ine i liked it had more flavor but she said it was too strong. overall probably tweak the curry to your preference when it comes to how much flavor you want.

The recipe is good. Maybe a bit too much coconut milk. Put your story at the end. At least one person that read it didn't care to and didn't care to scroll through it multiple times.
