- 2 yellow onions (medium, about 1 pound total)
- 4 inches ginger (piece, about 4 ounces)
- 5 lb. chicken (pasture-raised, *, cut into pieces, breasts, thighs, legs, etc.)
- 6 star anise
- 6 whole cloves
- 3 cinnamon sticks
- 1 Tbsp. cardamom pods
- 1 Tbsp. black peppercorns
- 1 Tbsp. kosher salt (or to taste)
- 4 Tbsp. fish sauce
- 1 oz. yellow rock sugar (1-inch chunk, I just used about 2 tablespoons of organic raw sugar)
- 1 lb. rice noodles (organic, or zucchini noodle for grain-free)
- 1 yellow onion (medium, sliced paper-thin)
- 1/3 cup chopped cilantro
- 1 sprig spearmint (and/or Asian/Thai basil)
- bean sprouts (– fresh or canned, about 1/2 pound)
- green chili peppers (Sliced, jalapeño or serrano)
- lime wedges
- chili sauce (such as Tuong Ot Sriracha)
