- olive oil
- 8 chicken tenders (sliced in strips)
- pepper
- salt
- 1 onion (diced)
- 8 oz. mushrooms
- 3 cloves garlic (chopped)
- 1 bag spinach
- 1 cup pesto
- 3 Tbsp. flour
- 3 Tbsp. butter
- 3 1/2 cups milk
- 2 cups shredded cheese (I used a combination of parmesan, monterey jack - see note)
- 1/2 cup shredded mozzarella cheese

Used Parmesan and mozzarella, next time I think mozzarella and pepper jack would be better. Otherwise it was just okay

Amazing! I used 1/2 onion, 3 cloves of garlic.. but I didn’t use the mushrooms, spinach, or cheese called for, and I opted for freshly grated Parmesan to top instead.

Delish!! Adding this to my rotation. Makes a ton! I would halve if only cooking for two unless you want a ton of left overs.
Only changes I made was added a little more milk, sauce was really thick; used precooked chicken (to make it easier was for me) and added a little panko on top for some crunch.
