- 4 boneless, skinless chicken breasts
- sea salt (or Kosher, to taste)
- fresh ground black pepper (to taste)
- vegetable oil (for frying)
- 7 cups tomato sauce (recipe follows, or use pre-made sauce)
- 1 cup mozzarella cheese (grated)
- Italian parsley (chopped, for garnish, optional)
- 4 Tbsp. olive oil
- 1/2 cup yellow onions (minced)
- 4 garlic (gloves, minced)
- 7 cups crushed tomatoes (Cento Brand recommended)
- 6 oz. tomato paste (use less if a thinner consistency is desired)
- 2 tsp. kosher salt (add more to taste)
- 1 cup flour
- 2 large eggs (plus 2 tablespoons water, whisked)
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. dried basil
