  • 10 ounces rice noodles (Thai)
  • 1 pound boneless, skinless chicken breasts (sliced into small strips)
  • 2 tablespoons vegetable oil
  • 1/4 cup dark brown sugar (packed)
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 red bell pepper (sliced into thin strips and strips halved)
  • 1 1/2 cups matchstick carrots
  • 2 cloves garlic
  • 4 green onions (whites minced, greens sliced into 1-inch pieces)
  • 2 cups bean sprouts
  • 3 large eggs
  • 1/2 cup unsalted peanuts (roughly chopped)
  • 1/3 cup cilantro (chopped)
  • red pepper flakes

    Very bland - I doubled the sauce but it still wasn’t quite right
    Texture and composition is great. Could use a bit more or zap though, e.g. actual pepper.

    Sauce was very lime/vinegar flavour and didn't taste very good. Ended up just putting pre-made sauce

    overall this came out good... it was needing a bit more flavor we will try and add a bit more the next time we cook. i didn't use the red bell pepper and we used chili sauce to make it spicy.

    Not quite as Thai spicy as I expected but it was all eaten so no problems there. Maybe a little more chilli. I think doing the eggs separately and then adding at yhe end would be better than scrambling them in the vegetables.

    Pad Thai turned out great. Great flavor but could be a little spicer. I subbed baby bok choy for bean sprouts because I don’t like them.

    I love this recipe, it was easy and delicious. The only reason I deducted a star is because I think it should suggest using sambal olek in lieu of red pepper flakes, as I made this change and without it, the dish was not as tasty!

    It was delicious! I will do what some of the reviews state when I make it again. They suggest doubling the ingredients for the sauce, I agree. I just want a little liquid with my pad Thai. That will give it to me. This really IS a good dish!

    It was delicious. I added zucchini and left out the sprouts and coriander. I think some sliced snow peas would have been a nice addition.

    The first time I made this, the noodle to other ratio was way off. The second time I doubled the veggies and sauce, and that improved things a lot. The flavor of the sauce seems spot on to me.

    Great! But a good thing to note is that when using the rice vinegar, you shouldn’t use as much as the recipe calls for or else it turns out with a VERY vinegar taste. I fixed it by mixing in peanut sauce and more lime juice, which helps cover the vinegar. I also added peppercorn chili oil, cayenne, and A LOT of red pepper flakes to give it a nice building heat. 8/10 would make again.

    Wasn't too sure about the sauce before I incorporated it, but it was great! Just like the thai trucks back home used to make it! Granted, this isn't the most authentic recipe but it sure is good

    Honestly tasted nothing like authentic pad Thai. It was basically just sour bland noodles. Disappointed. I was hoping for even a little hint of a pad Thai taste.
